The essential oil of star anise is obtained from the fruits of Illicium verum . The scents of star anise are very reminiscent of the smell of the classic anise, Pimpinella anisum . The word derives from the Greek “aniemi” which means “to drive away”, intended as “chase away ailments”. The essential oil of anise contains in fact various active ingredients, which are used not only in perfumery, but also in medicine and herbal medicine for the preparation of drugs and natural remedies. The notes of star anise belong to the aromatic olfactory family and release sweet herbaceous top notes with floral and woody facets, typically aniseed.
